ThinkFoodLab: An Ever-Evolving Menu Showcases Different Culinary Concepts

Culinary expert José Andrés is never content with leaving a menu the same. That’s why he created ThinkFoodLab. This eatery will rotate different culinary concepts and menus constantly, offering guests something new to try every time they visit. ThinkFoodLab’s current concept is called Pepe, which evokes José’s native Spain with inventive sandwiches.

Try the Cachopo, a sandwich featuring a breaded filet of pork that oozes ham and cheese with every bite. The bocata de vegetales comes stuffed with eggplant, tomato, olives, avocado, and piparra peppers. Pepe also offers pressed “bikini” sandwiches, like the mushroom and cheese, as well as the Spanish version of a hot dog, sausage with aioli and brava sauce. Salads, soups, and a handful of traditional sides round out the lineup of Spanish dishes at ThinkFoodLab’s Pepe.
